Healthy Halloumi Kebabs

2 tbsp EVOO
1 block halloumi
1 punnet cherry tomatoes
1 zucchini
1 red onion

1 capsicum
1 tbsp dried oregano
1/4 cup Greek yoghurt
1 lemon, wedged
2 pita breads
1 tbsp fresh oregano, picked


Soak skewers in warm water for at least 30 minutes prior to cooking so they won’t burn while cooking. Dice halloumi into 3/4 inch cubes, cut zucchini into 1/2 inch rounds and cut the red onion into large chunks. Slice the capsicum into medium size pieces. Mix in a large bowl with the cherry tomatoes, EVOO and oregano.

Alternately skewer all vegetables and halloumi. On a bbq or grill pan cook skewers until you can see the halloumi is turning golden brown. 

Serve with warmed pita bread with a smear of Greek yoghurt, fresh oregano and a wedge of lemon. Enjoy.
