Ingredients
½ cup brown rice
1 carrot, grated
¼ cup red cabbage, shredded
1 cup raw spinach
4 slices smoked salmon
½ cup edamame beans, blanched
½ avocado, sliced
½ cucumber, diced
1 sheet nori seaweed, ripped
1 tbsp black sesame seeds
Dressing
1 tbsp apple cider vinegar
2 tbsp soy sauce
1 tsp chilli sauce
1 tsp sesame oil
1 tsp sesame seeds, toasted
1 knob fresh ginger, minced
Instructions
Place rice, carrot, cabbage and spinach as the base of the bowl. Top with smoked salmon, edamame beans, avocado, cucumber, nori and sesame seeds. In a jar mix the vinegar, soy sauce, chilli sauce, sesame oil, sesame seeds and ginger. Drizzle dressing over poke bowl.
