Ingredients:
2 cups self-raising flour (or wholemeal flour for a healthier option)
⅔ cup caster sugar (or substitute with ½ cup of honey)
1 tsp. bicarbonate of soda
1 cup (250ml) low fat milk
2 eggs
1 tbsp. light olive oil
2 bananas, mashed
1 tsp. vanilla essence
Optional Extras:
- Cinnamon or nutmeg
- Berries (e.g. blueberries, raspberries or strawberries)
- Nuts (e.g. chopped walnuts, pecans, pistachios or slivered almonds)
- Dried fruit (e.g. raisins, dates, figs, cranberries, banana slices, coconut)
Instructions:
Preheat oven to 180°C
Lightly grease a loaf tin and line with non-stick baking paper
Sift the flour and bi-carb soda into a mixing bowl
Stir in the sugar then add the milk, eggs, and oil
Add the mashed bananas and vanilla essence
Mix well until the all the ingredients have combined and the mixture is smooth
Spoon mixture into the loaf tin and bake at 180°C for 50-60 minutes until cooked through.
Turn onto a wire rack to cool, then cut into slices or squares
